Recipe of the Week
Okay, some of you have noticed that I didn't post my weight loss results on Tuesday. Well, that's because there was no change to share. However, my total to date is about 13 pounds - in two and a half weeks. I'm happy with that. I notice my clothes fitting a little more comfortably.

I wanted to share with you a recipe I tried last night. I found it on Weight Watchers. I have to figure out how to add a little more flavor to it, but it was otherwise tasty. Here ya go....

Cheesy Chili-Mac
Weight Watchers Points = 5
Servings = 8

1 spray of cooking spray
2/3 pound raw extra lean ground beef (I actually used ground turkey)
2 medium onions, chopped
29 oz canned stewed tomatoes, Mexican-style- undrained (I couldn't find Mexican-style at the Elmer IGA, maybe if I had, it would be more flavorful)
2 1/2 cups canned tomato juice
4 oz canned green chili peppers, diced, drained
2 tsp chili powder
1 1/2 cup uncooked macaroni, elbow
31 oz canned pinto beans, drained and rinsed
1/2 cup low-fat shredded cheddar cheese (I also used one serving with low-fat sour cream and it was good)

Coat a large skillet with cooking spray. Cook ground beef and onion over medium-high heat until meat is browned, about 10 minutes; drain off fat.

Stir in undrained stewed tomatoes including juice, tomato juice, chili peppers and chili powder; bring mixture to a boil.

Stir in macaroni and beans; return to boiling. Reduce heat, cover and simmer until macaroni is tender, about 15 minutes. Spoon chili into bowls, and sprinkle with cheese (or plop on dollop of sour cream). Yeilds about 1 cup of chili and 1 tbsp of cheese per serving.
