Recipe-of-the-Week
Howdy friends! How's your week going? I'm glad I'm in the "work from home" portion of the week. Gone are the days when I was bored. I was up until 1:30 this morning working on a stupid project plan. Yes, it's my fault because I procrastinated last Thursday and Friday. Can't do that again this week! (You know I will anyway.)

Last night I had a lot of fun. My friend, Melissa (from Lancaster), came over for dinner. I'm still surprised she succesfully navigated the back roads from the Commodore Barry Bridge. I'm confident in her abilities to follow directions, don't get me wrong, but those roads are dark and unmarked. But, she made it! I figured I'd share the recipe with all of you from dinner - its great for using up leftover chicken, ham, or turkey:

Chicken Pockets
1 Package Pillsbury Crescent Rolls (tube with 8 rolls)
2 Cups Cooked and Cubed Chicken (or Ham or Turkey)
3 ounces cream cheese
2 tbsp margarine
1/4 tsp salt
1/8 tsp pepper
2 tbsp milk
1 tbsp chopped chives (dried are fine)
melted butter or margarine
bread crumbs

Unroll crescent rolls and divide into four rectangles leaving 2 crescents together for each rectangle. Combine chicken, cream cheese, margarine, salt, pepper, milk, and chives in a medium bowl. Plance 1/4 chicken mixture into each rectangle. Fold corners to center and pinch to seal. Brush tops of each pocket with melted butter or margarine (I use the spray butter) and sprinkle with bread crumbs. Place on a lightly greased baking sheet and bake as directed on package of rolls. Can be made up ahead and baked when ready.

After dinner I shared some of my stamping passion with Melissa and she shared her pictures of her recent trip to Thailand. I'm ready to go! It looked amazing, but the squat toilets intimidated me a bit. I'd probably stick to the luxury resorts where I'd get swept away by a tsunami. Oh, and then there were the malaria-carrying mosquitos and leeches! Yuck!!!

I agree about the squat toilets... but the rest of it you could handle... esp the luxury hotels! Thanks again for a fabulous evening and wonderful dinner. I am looking forward to trying the recipe.
Last night was another tasty dinner at Morton's with the project team. I would highly recommend going there -- esp when someone else is paying!
